Guacamole Deviled Eggs

 Deviled Eggs or Angel Eggs as our family calls them are a favorite side dish for a carry in meal. However, I never liked them. I thought it was a good way to ruin an egg, the reason being, I do not like mayonnaise or mustard.


This holiday season I wanted to try my hand at making guacamole-deviled eggs, however, the recipes all differed far too much. I remembered mom making standard deviled eggs and just adding mayonnaise and mustard to the egg yolk left extra filling in the bowl. So taking four eggs and adding two avocados and other ingredients I knew there would be way too much filling for the eggs.

Keeping this in mind, I thought I would simply make my guacamole recipe using avocados, cumin, garlic powder, sweet onion, tomato, jalapeno peppers, lime juice and salt and pepper. Normally I would have used a red or orange sweet pepper for the guacamole; I simply did not have any.

After boiling a dozen eggs, peeling and cutting them in ½, making the guacamole, I took an egg and did a trial run. I popped out the egg yolk then added the same amount of guacamole and mashed it all together. I then filled the egg halves and tasted. It was an oh my goodness moment. The taste of this deviled egg was one that I could enjoy.

Since I made a large batch of guacamole, I could enjoy guacamole deviled eggs as well as dip and eat chips and crackers.

Making a crepe starts with a basic recipe, then you use your creative skills to make the crepe for the meal or dessert you desire. This is a must-try easy recipe.

There is no need to head to IHOP or any other restaurant, making crepes is surprisingly easy to make at home. Crepes are great for a dessert or a meal depending on the filling and toppings used. Fruit crepes topped with powdered sugar or cinnamon sauce topping are great for parties or snacks, where as vegetables and cheese make for a nice lunch or luncheon. Making a crepe starts with a basic recipe, then you use your creative skills to make the crepe for the meal or dessert you desire. This is a must-try easy recipe. 


Ingredients for the Basic Crepe Recipe:

  • 4 Large eggs
  • 1 1/3-Cups milk
  • 2 Tbsp olive oil
  • 1-Cup flour
  • Salt, pepper and garlic powder

Instructions for making the Basic Crepe Recipe:
 

1. Heat 8-inch or 10-inch skillet and spray with non-stick vegetable spray.
2. Beat eggs slightly, using either whisk or electric mixer.
3. Add remaining ingredients and continue to mix until smooth.
4. Pour 2 or 3 tablespoons into hot 8-inch skillet or ½-cup mix into a 10-inch skillet.
5. Moving and tilting quickly the skillet around to spread evenly.
6. Brown lightly on first side, flip over and brown on other side.
Fruit filled crepes


Tips for making a basic crepe:
  • 8-inch skillet had slanted sides with 6-inch baking surface.
  • 10-inch skillet had straight sides; adjust the batter to suit your skillets

Vidalia Sweet Onion Pie Recipe


One good benefit of having a home care business and working with the elderly is learning great stories from days gone by and learning of great recipes. Vidalia sweet onion pie is one of those recipes.


Vidalia sweet onion pie is great any time of year. In the summer when they are coming out of those Indiana gardens, it is even better as you can make a complete garden meal.


Vidalia Sweet Onion Pie will be one of those recipes you will want to try. 

Ingredients needed to make an Onion Pie:

  • 9-inch piecrust
  • Vidalia or Sweet onions; sliced, enough to fill the pie pan.
  • 3 Tbsp butter or Olive oil; for a healthier pie
  • 3 Eggs; beaten
  • ½ Cup Fat Free Evaporated Milk
  • Salt and Pepper to taste
  • 9-inch pie pan 


Instructions to make a Vidalia Sweet Onion Pie:

A Great Summer Time Meal
  1. First thing you will need to do is either make or buy a piecrust. Why do the hard part when Wal-mart, Kroger, Martins or your local store will have a great pre-made crust.
  2. Let your crust come to room temperature and put it in your pie pan.
  3. Pre-heat your oven to 425 degrees Fahrenheit, 10 minutes should suffice.
  4. Slice and sauté the Vidalia onions in butter or olive oil until tender. Put your sautéed onions in your crust.
  5. Beat the eggs and add fat free evaporated milk. Add salt and pepper.
  6. Pour eggs mixture over your sautéed onions, place in your pre-heated oven add bake for 18-20 minutes or until a knife inserted in the center comes out clean.
  7. Serve the Vidalia sweet onion warm, your family is going to love it.

Egg Salad Recipe

Boiled Eggs for Egg Salad
Do you take sandwiches for lunch time at work but just get tired of the same-old thing all the time? 
My step-daughter did, she wanted to know how to make Egg Salad for sandwiches. 

Recipe for Egg Salad
Therefore, if you want an easy recipe to take a plain old egg and turn it into egg salad.

This recipe for egg salad is easy to make, packed with protein, cost effective and versatile to change to your own taste. Besides protein, eggs are a great source vitamin A, D and B12. Eggs, even if they are free range, make an inexpensive meal and you can use them in many different recipes.
If you are concerned about your cholesterol, you can still eat eggs, just do not over do it.

For this recipe for egg salad, you will need:


  • 10-12 eggs; boiled
  • 2 stalks of celery; minced
  • 1 small onion; minced
  • 1 tsp black pepper; or to taste
  • 1 tsp onion powder; or to taste
  • 1 tsp garlic juice or powder; or to taste
  • 1 tablespoon of yellow or Dijon mustard
  • Miracle whip, salad dressing or Mayo; enough to make moist; start with 4 heaping tablespoons
  • Basil, oregano and thyme; optional
  • Colby cheese; optional

Steps for making this recipe for egg salad:


  1. Put eggs in saucepan, cover with water and bring to a boil. After the eggs are hard-boiled, empty off the hot water and fill the pan with cool water to make peeling the eggs easier
  2. Peel the eggs then rinse to remove any eggshell particles. Put back into the saucepan for later use.
  3. Wash 2 stalks of celery and mince into small pieces.
  4. Peel, rinse and mince into small pieces, a small onion. If you do not have any small onions, use ½ of a medium onion.
  5. Chop the eggs into small chunks, add to the eggs, the celery and onions, add spices and stir.
  6. Add 1 tablespoon of mustard of choice, salad dressing, miracle whip or Mayo and mix. Add more salad dressing until the recipe for egg salad is moist and spreadable.
  7. Using a small spoon taste the recipe for egg salad and adjust the spices if needed.
  8. Store the recipe for egg salad in the refrigerator in a sealed bowl.

Tip:
If you want it to have less cholesterol, remove 6 of the egg yolks before chopping the eggs.
Add cheese, basil, oregano and thyme for added flavor.

Egg Custard Pie


You’ve decided you want Custard Pie but you’ve never made one and you don’t know where to turn. Searching the internet for pie recipes comes to mind but in doing so; discover many variations making it even more confusing. Let me help with that confusion, my mom’s recipe for Egg Custard Pie is excellent.


Baking an egg custard pie is so simple anyone should be able to do it. OK making it totally from scratch, making  your own pie crust, does give it an extra challenge but the pre-made pie crusts are so good why stress yourself. Chances are you have everything you need to make baked egg custard or an egg custard pie already in your home.

Ingredients to make a Egg Custard Pie:



  • 3 or 4 eggs
  • 2 tbsp flour
  • ¼ tsp salt
  • 1-cup sugar
  • 1 ½-cup milk
  • 1 tsp vanilla
  • 3 tbsp butter/margarine melted
  • Nutmeg or cinnamon to sprinkle on top
  • Piecrust


 Baking instructions to make an Egg Custard Pie:


  1. Pre-heat the oven to 375 degrees Fahrenheit.
  2. Using medium sized mixing bowl whisk eggs until lemon color.
  3. Add flour, salt and sugar and mix well.
  4. Beat in milk, vanilla and melted butter.
  5. Pour into a piecrust, sprinkle with nutmeg or cinnamon and bake for 55-60 minutes.
  6. Allow your pie to set before serving.
