Cowboy Cookie Recipe: not just for cowboys



I saw the recipe for Cowboy Cookies on Facebook. Social media is a great way to get new recipes and after baking my first batch of Cowboy Cookies, I am glad it is. 

After seeing the initial recipe for Cowboy Cookies, I was curious to how many the recipe made. Googling the Cowboy Cookie recipe I discovered there were many sites with a recipe; however, the only thing that was consistent was the main ingredients. The walnuts, coconut, pecans and or raisins were different and or even optional.

Knowing my husband and daughter do not like coconut made that choice easier; no coconut here. I love all the options; therefore, I attempted to make them as the recipe I came across had.
I suddenly ran into a snag as the walnuts I had tasted bad, I had clearly had them far too long so into the trash they went. Seeing the pecans in the refrigerator drawer, and I really like them better, pecans now where part of our Cowboy Cookies I was making to give away.

Ingredients for Cowboy Cookies:



  • 1 cup butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tsp pure vanilla
  • 1 tsp baking soda
  • ½  tsp Himalayan salt
  • ½  tsp baking powder
  • 2 cups all-purpose flour; or gluten free flour if needed
  • 2 cups organic oats
  • 1 cup  dark chocolate chips
  • 1 cup crushed walnuts or pecans as I used

Instructions to make Cowboy Cookies:

 

1.     Preheat the oven 350 degree Fahrenheit.
2.     Cream together the butter and sugars; add the eggs and mix well.
3.     Add the vanilla, baking soda, salt, and baking powder.
4.     Mix in the flour and oatmeal and after all is blended; add the chocolate chips and walnuts or pecans.
5.     Drop by large spoon on a parchment lined cookie sheet.
6.     Bake at 350 degrees for 12-16 minutes. 

**The baking time will vary on how big you make your Cowboy Cookies. I got 2 dozen per batch so they are fairly large and baking time longer.

Bible Believing Christian and Proud of It

Last night on Facebook, I was shocked at a post I saw that was criticizing Christians, the Bible and essentially God. As our pastor has taught us, our sin has separated us from God, we need mercy, and heaven forbid we all need mercy and grace as we all will not make it to Heaven, Hell is a real place.

I digressed, back to the Facebook post, it started out like this: "What bugs you about facebook? there are many things that bug me but the one thing that really bugs me is the people who make comments based on what the bible says, and then quotes scriptures."
This same person has had some major events happen in her life and not all for the good. I have seen her talk about gods, little g, not the one and only wonderful living God, although she quotes scripture.

My original comment to the post was, “I quote the Bible all the time, it is to be our source. It tells us to hide it's words in our hearts.

She did not comment on what I said, however, to the lady agreeing with this writer she posts, “lately people are commenting back to me in threads with scriptures. they cannot form their own sentence in their own words, they have to quote the bible...it is not natural...they are stepford bible pushers and well god says love your neighbor but golly these bible pushers are the first ones to throw the stone at gay marriages...I don't get it...how is that love????...I am just annoyed with it all.

By the time I found the new testament verse that answered why Christians do not agree with gay marriage there were several other comments all agreeing with her. I posted the scripture and you would have thought I had personally attacked another woman that is gay, however, I did not know this, therefore, it was no personal attack I was simply answering why as a bible believing Christian we cannot agree with it.

Now, I have family and friends that definitely believe differently than I do, however, we have agreed to disagree in love. I kind of thought it was the same this way, however, it was very obvious by the comments made it is not.

Therefore, I stepped out of the conversation, while mean and nasty comments kept rolling in. I sent a private Facebook message to the women saying in lieu of making a bad situation worse I think it is best to un-friend you, I continued to add, “I try to live my life as a Christian which means reading the Bible and attempting to live the best I can. It also means sharing the Bible. I did not say I hated gay people, as I have family that is gay. Do I have to love the sin while loving the sinner, NO! I also am NOT ashamed of being a Bible believing Christian.

With that said, have any other Bible believing Christians felt attacked lately? If so how have you handled it?

Only My Granddaughter

I read my daughters post of Facebook this morning and laughed so hard and out loud. I could picture my granddaughter doing just as she described. I could also imagine my daughters face when she did it. It sounds funny reading it, however, I'm sure Jasmine was totally embarrassed.
 "(Ok, so let me start off by prefacing my actual post with this: Zeely has personal space issues that we've been working on and tends to get too close to a person's face when being silly and animated.)

Preschool teachers down here in Kentucky do a home visit before school starts to meet the kids in their own comfortable environment. Great idea, right? Today was our day, and Zeely was so excited that she
1. couldn't relax long enough to take her usual afternoon nap so was even more worked up than normal by 6 p.m., and
2. apparently felt comfortable enough to jump up on her teacher's lap and, wait for it, accidentally licked her face!

Yep, she sure started off her school career with a bang! Definitely writing this one down in the memory book"
