How to Make Chicken Egg Rolls from Scratch

I love egg rolls, I have every since I worked in our concession trailer and would be parked right next to an egg roll concession trailer.
Our daughter went to school with their daughter so I bought theirs from them by the case for a while. However, I soon learned I could save money by wrapping my own egg rolls. You can use whatever meat you prefer, however, I eat a lot chicken; therefore, I made chicken egg rolls. I will show you how you can make your own egg rolls.


Ingredients to make chicken egg rolls:

  • 1 Package egg roll wrappers
  • Shredded chicken
  • Shredded cabbage
  • 1 Egg; beaten
  • Seasoning of choice
  • Canola or Olive Oil

Instructions to make chicken egg rolls:

1.     Cook your chicken and season it to taste. After it cools, shred it up in small pieces.
2.     Shred your cabbage every fine. I often use my food processor however; you can do it with a hand grater. The pieces just need to be very fine.
3.     Take the egg roll wrappers out and let warm up a bit, so they are easier to work with.
4.     Place the egg roll wrapper on the counter top and lay it out looking like a diamond. Put some cabbage in the middle.
5.     Add some chicken to the top of your cabbage; you are going to start to fold your egg roll.
6.     Take the lower flap of wrapper and pull over the cabbage and chicken; next, take the sides and fold in.
7.     Start rolling up making it as tight as possible but making sure not to poke a hole in the wrapper.
8.     Dip your fingers into the beaten egg, put some on the wrap, and seal the egg roll.
9.     Roll up the whole package of egg roll wraps.
10.  Make sure your oil is hot before trying to fry your egg roll. The temperature of the oil should be 375-400 degrees. Carefully place the egg roll in the oil and brown first side. With the tongs, turn it over and fry the other side. You may have to hold it as it will try to roll back.
11.  Remove the chicken egg roll from the oil and put it on paper towel to allow the excessive oil to drain off.
We enjoy our chicken egg roll, made from scratch with soy sauce.

Cheesy Chicken Pasta an Easy One-Pot Recipe



Mac and Cheese is a favorite one-pot pasta meal for children, however, you want a something more. Cheesy Chicken Pasta an Easy One-Pot Recipe will do just that.
This recipe is very versatile, change it up to suit your family's taste. It is also a way to use leftover chicken breast or holiday turkey.


According to Wikipedia, “In cooking, the Italian expression al dente (play /ælˈdɛnt/; Italian: [al ˈdɛnte]) describes pasta and (less commonly) rice or beans that have been cooked so as to be firm but not hard. "Al dente" also describes vegetables that are cooked to the "tender crisp" phase - still offering resistance to the bite, but cooked through. Keeping the pasta firm is especially important in baked or "al forno" pasta dishes, where the pasta is cooked twice. The term "al dente" comes from Italian and means "to the tooth" or "to the bite", referring to the need to chew the pasta due to its firmness. Pasta that is cooked al dente has a lower glycemic index than pasta that is cooked soft."


Ingredients needed for Cheesy Chicken Pasta:



  • 1-16 oz package of pasta your favorite kind; Rotini, Farfalli Bow ties, Conchiglie Shells etc.
  • 1-16 oz jar Cheesy Ragu Double Cheddar or Roasted Garlic Parmesan
  • 10-12 oz chicken breast, cubed
  • 3 oz French Fried Onions; French’s or any store brand will work

Instructions to make Cheesy Chicken Pasta:



  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Using a pan that can go from the stove top, directly in the oven, fill with water and heat to boiling. Dump in the pasta and cook until lightly al dente. Drain off any excess water.
  3. Pour the Ragu Cheese into the pasta, rinse the Ragu jar with a little milk and swish around and pour in the pasta, stir.
  4. If you are using leftover chicken, cube it and add to the pasta. If you want to take the easier route, use canned chicken breast. Without draining, add it to the pasta.
  5. Top with the French-fried onions and place in the preheated oven and bake for 30 minutes. Making cheesy chicken pasta is an easy one-pot recipe.

Homemade Popeye Noodles and Chicken

Being an old country girl, homemade Popeye noodles with chicken over mashed potatoes was a very common meal. Popeye are a bit thicker than store purchased noodles and extremely delicious. Why are they called Popeye noodles? It was never questioned in my family as they were homemade noodles, good and no one cared. If you’ve never made popeye noodles this recipe is definitely a must try.

Instructions for making Homemade Popeye Noodles and Chicken:

  1. Put flour, egg and maybe a splash of water and mix. Add Salt, pepper, garlic & onion powder. Like Rachael Ray just measure the seasonings with a pinch of this and that, and using the palm of your hand.  Learn to go by how it looks and tastes.
  2. Blend vigorously to make stiff dough.
  3. Place dough on your well-floured surface, you might have to work in more flour before spreading out your dough.
  4. Pat, or roll out, your dough until you get the desired thickness you prefer, approx ¼ inch thick.
  5. Cut into strips length wise, approx 1 inch wide.
  6. Cut into squares by cutting the other way.
  7. As you're cutting the Popeye dough, separate the squares and move them out of the way so you can get to the rest of the dough. As you are doing this, make sure you have plenty of flour at all time to keep from sticking.
  8. Let your Popeye noodles lay out to dry a bit while you go to the next step.
  9. Cook a chicken or use leftover you might have in the refrigerator. Cool and scrape off the extra fat.
  10. Pick your cooked chicken off the bone. Put your chicken in stockpot with approx 4 qt of water and bring to a boil.
  11. Drop your Popeye noodles in the stockpot a few at a time and stir. Do this until all your Popeye are in the pan.
  12. After all are in the pot reducing to a medium heat, stir frequently to avoid sticking and clumping together.
  13. Test your noodles by tasting a small piece every so often. When they are done serve them with mashed potatoes, a veggie of choice and big glass of filtered ice water.

Tip:
  • If you made an angel food cake to go with your fresh strawberries, is a great time to make homemade noodles.
  • Basil, Thyme and oregano cooked in your chicken makes a great base for the Homemade Popeye noodles.

Lime Chicken Recipe

Lime chicken is perfect all year long as you can make it in the oven no matter what the season. Weather a sun filled or rainy day you can pull out your Indoor grill and make shish kebabs or on days simply to hot to cook indoors head outside and use the big grill and make kebabs. Do you love eating chicken; however, you get tired of the same chicken recipes? This lime chicken recipe is fantastic whether made in a casserole form or as lime chicken kebabs.
Using lean chicken breast, vitamin C packed lime, red, orange and yellow bell peppers, and sweet onions, such as a purple onion or a Vidalia onion; you can create a nutritious low calorie meal for your family inexpensively.

Ingredients for Lime Chicken Recipe:

  • 1 Tablespoon of lime juice, fresh squeezed or concentrates
  • 3 Tablespoons olive oil
  • ½ teaspoon of Himalayan salt
  • ¼ teaspoon of black pepper
  • 4-6 Boneless, skinless chicken breasts; cut into 1 ½-inch pieces
  • 1 Purple or sweet Vidalia onion; cut into wedges
  • 1 Orange bell pepper; cut into wedges
  • 1 Red bell pepper; cut into wedges
  • 1 Yellow bell pepper; cut into wedges

 

Direction for Lime Chicken Recipe:

  1. Using a large bowl squeeze the lime to get the juice. Rachel Ray’s trick to juicing lemons and limes is to firmly press and roll it around on the counter top or stick it in the microwave for 10 seconds.
  2. Stir into the limejuice, olive oil, salt and pepper.
  3. Cut the boneless skinless chicken breast into small 1 ½-inch pieces. If your pieces are too large, the cooking time increases and or you take a chance they will not cooked thoroughly. If you are making the casserole, the chicken chunks could be larger.
  4. Add the chicken to the lime mixture, stir and allow the chicken to marinate no less than 10 minutes.
  5. Taking skewers, start threading alternately, the peppers, onion and chicken. Mix up the colors of the peppers as you put them on the skewers making them look appealing as well as taste good.
  6. Grill the lime chicken kebabs approximately 10-15 minutes or until the chicken is 165 degrees Fahrenheit. If baking in casserole form, preheat the oven to 350 degrees Fahrenheit and bake for 1 to 1 ½ hours, again the meat needs to be 165 degrees.
o      No matter which way you choose to make the lime chicken you will not be disappointed. Good for you meals, like this grilled lime chicken recipe; does not have to be boring it is simply good.
  • Whether grilling on your indoor DeLonghi Grill or making a casserole out of the lime chicken recipe, the only thing to make it even better is to pair it up with the vitamin C packed mango salsa.

Chicken and Cauliflower Poppers


I love getting recipe ideas from Facebook, family and by watching The Chew. Last week Daphne Oz made Chicken and Cauliflower poppers. I did modify the recipe a touch to fit our family Daphne used fresh parsley where as I have an abundance of oregano from the garden and I like it so much better than parsley. The second substitution was a sweet onion from the garden replacing the scallions she used. Last but not least, instead of grinding chicken I used already ground turkey I had in the freezer.

 

I wanted to make the chicken and cauliflower poppers Friday night for supper without telling my husband what they were as I wanted an honest reaction for the new recipe. Well, it was well received and he almost did not leave me any. 

 

Not frying all the poppers I refrigerated the remaining mixture thinking it would make an easy meal Sunday after church or even Monday evening. The hubby liked the poppers so much; he requested I fry up the rest tonight. With the chicken cauliflower poppers we had Kale chips for a delicious supper.

 

Ingredients to make chicken and cauliflower poppers:

 

  • 1 small head cauliflower; cut into florets
  • 1 small sweet onion; chopped
  • 3 tablespoons oregano; dried
  • 1 clove garlic
  • 2 teaspoons soy sauce
  • 1 pound ground chicken or ground turkey
  • salt and black pepper
  • oil; for frying

Instructions to make chicken and cauliflower poppers:
 
1.     Using a food processor, combine cauliflower florets, onions, oregano, garlic and soy sauce; puree until a chunky paste forms.  Add the ground chicken or ground turkey, salt and pepper and pulse until the mixture has evenly combined.
2.     Heat enough vegetable oil to cover a medium sauté pan over medium high heat.  Using a tablespoon, scoop the meatballs into the pan being sure not to crowd the pan.  Cook on each side for 4-5 minutes.
3.     Serve with your favorite dipping sauce.
 

We loved the chicken and cauliflower poppers, serve them up for your family, it's even a great super bowl party recipe, they will love them.

Teach Your Children the Best Christmas Gift is Not Under the Christmas Tree

Teaching our children to expect high dollar gifts or several gifts under the Christmas Tree, is not a good thing for you or for them. However, you should be teaching them the true meaning of Christmas being about Christ and his birth. In case you yourself are unaware of the story, let me refresh your memory.
