Fried Parmesan Crusted Zucchini: Gluten-Free or Regular


Zucchini is one of the favorite foods in the summer. It is so versatile from low calorie pizza, breads or fried. Zucchini of course is naturally gluten-free, however, to coat it for frying; your favorite gluten-free flour will be required. I live in Amish territory where the Amish stores carry just about any flour you can think of. I use plenty of high gluten flour as well as Bob Red mills all-purpose gluten-free flour.

Ingredients for fried Parmesan crusted zucchini:


  • 2 zucchinis, medium size
  • 1 ½ cups  High Gluten Flour or All Purpose Gluten-Free Flour
  • ½ cup Parmesan cheese
  • 1 tsp Himalayan salt
  • ¼  tsp ground pepper
  • ½ tsp garlic powder
  • 2 Tbsp fresh oregano and basil or 1 Tbsp dried  
  • 3 eggs
  • ½ cup milk
  • Oil for frying

Instructions to make fried Parmesan crusted zucchini:



    1. Wash the zucchini and cut off the ends.
    2. Slice the zucchini into ½ inch slices.  
    3. In a small bowl, combine the flour, Parmesan cheese, salt, pepper, garlic powder, oregano and basil. 
    1. In a separate bowl, whisk the eggs and milk.  
    2. Dip the zucchini slices into the milk, then coat in flour mixture, dip again in the milk and coat again in flour mixture. 
    1. Heat the oil to 375 degrees, place the coated zucchini in the hot oil and fry on each side until golden brown. Remove from the oil, put on a paper towel lined plate, and until all zucchini is fried.  

The fried Parmesan coated zucchini is an easy recipes and goes great with any meal.
